GAPCO started with a simple question: why travel the country when you can taste it all in Brunswick? Since 2010, we've been answering that question one city-inspired pizza at a time.
The leap that started it all
In 2005, the founders bought a local franchise to learn the craft from the ground up. By 2010, they were ready to do it their way — and opened GAPCO on Pearl Road.
The big idea: bring America to Brunswick
The founders traveled America and fell in love with its wildly different regional pizza styles. GAPCO was built on one belief: you shouldn't have to leave Brunswick to taste any of them.

Each of our 25+ specialty pizzas is named for a real American city and rooted in what made it famous — from the wheat-grown Bismarck to the over-the-top Las Vegas to the owner-invented Cleveland.
Northeast Ohio's best Chicago deep dish
Our Chicago deep dish was named NEO's Best four years running (2015–2018). The Detroit square and Denver mountain pie round out a lineup that's earned recognition far beyond Brunswick.
